This classic tomato sauce recipe is great for regular or complete pasta . It is also suitable for our homemade pizzas , to which we will add a pinch of oregano.


· 7 fresh tomatoes (or a tin of peeled canned tomatoes)

· ½ red pepper

· ½ onion

· 2 cloves garlic

· 2 tablespoons of olive oil

· ½ cup of white wine

· Salt, according to your tastes

· A pinch of sugar


1. If we choose to use fresh tomatoes, we must prepare them before cooking . Here we can use two methods. The first is to grate raw and then use the pulp obtained (without the seeds) to obtain the tomato sauce. The other method is to boil them, remove the skin and pips, and crush them.

2. However,  if we use tomato preserves, we will not have that to crush them.

3. We reserve the tomato pulp  already prepared and we are dedicated to cooking vegetables.

4. In a saucepan, add the olive oil and fry the finely chopped onion, pepper and garlic . Add the salt so that the vegetables release their juice.

5. When the vegetables are almost golden,  add the tomato pulp with a pinch of sugar.

6. Stir for a few minutes,  add the white wine, lower the heat to a minimum and reduce the sauce .

7. After an hour of slow cooking, our tomato sauce will be well cooked, tasty and very aromatic.
