Fresh potatoes in papillote with peasant bacon and red onion


After a nice early spring, temperatures are struggling to start up again. For this rainy weather, we offer you a recipe that is full of taste and that fits the body without being heavy.

Ingredients:


  • 1 kg of early potatoes
  • 8 slices of smoked pork bacon
  • 1 branch of rosemary
  • 1 bunch of new red onions
  • 4 tablespoons of olive oil
  • Fine salt
  • Espelette pepper

Method:

  • Wash the potatoes under a trickle of water.
  • Peel the onions, then sprinkle and crush the rosemary.
  • On the mandolin, detail the onions and the potatoes in strips of 4mm thick and arrange them in a salad bowl. Pour olive oil, salt, Espelette pepper, and rosemary and mix well.
  • In 4 squares of parchment paper 40 cm on each side, place 2 slices of bacon and add the potatoes and onions, superimposing them on a rosette.
  • Close the curls and bake at 220 ° C for 30 minutes.
  • At the end of the oven, let rest the curls 10 minutes before serving, accompanied by a green salad with walnut oil.
